Gently drain the cans of sardines into a fine sieve with a bowl underneath, shake off any excess oil
*remember to be gentle, otherwise the sardines can easily break apart
Heat a large fry pan with a medium heat and add in 3 tbsp (45 ml) of the reserved olive oil from the canned sardines
In the mentime, finely chop the onion and roughly chop the garlic
Add the chopped onion and garlic into the hot fry pan, mix continuously, after 3 to 4 minutes and the onion is translucent, add in the hot smoked paprika and sweet smoked paprika, quickly mix together, then add in the white wine, mix and then let it simmer
After 2 to 3 minutes and the alcohol has been cooked off in the wine, add in the canned tomato sauce, chopped parsley and season with sea salt & black pepper, mix together, then gently add in the canned sardines, all in a single layer and evenly spaced out, lower to a low-medium heat and simmer for 5 to 10 minutes, then remove from the heat
You can serve this directly out of the pan or transfer into serving dishes, garnished with lemon wedges and chopped parsley, enjoy!
