Gently drain the cans of sardines into a fine sieve with a bowl underneath
Heat a large fry pan with a medium heat and add in the drained olive oil from the canned sardines
After a couple of minutes, add in the sliced onion, sliced green bell pepper, and sliced garlic, mix together, then mix every 1 to 2 minutes so everything evenly sautés
In the meantime, add the mayonnaise into a bowl, along with the Dijon mustard, grated garlic, lemon juice, and olive oil, then season with salt & pepper and whisk together
After sautéing the vegetables for 7 to 8 minutes and they're lightly sautéed, season with salt & pepper, mix together, and then turn off the heat
Cut the baguette into 3-inch (8 cm) pieces (this is about the typical length of a canned sardine), then cut each piece in half lengthwise
Add a layer of the mayo aioli over the bottom and top slice of each sandwich, then add some of the grated tomato over the bottom slice, along with a generous portion of the sautéed vegetables and two sardines, top off with chopped parsley, enjoy!
