Ingredients

  • 2 cans tuna in olive oil 4 oz / 110 grams each
  • 1 small onion
  • 4 cloves garlic
  • 1/2 green bell pepper
  • 1/2 tsp sweet smoked Spanish paprika 1.25 grams
  • 1 cup canned tomato sauce (passata) 240 grams
  • 2 tbsp chopped parsley 8 grams
  • sea salt & black pepper
  • 4 slices multigrain sandwich bread

Instructions

  1. Drain the cans of tuna into a fine sieve with a bowl underneath and gently flake the tuna

  2. Heat a fry pan with a medium heat and add in 3 tbsp (45 ml) of the reserved olive oil from the canned tuna

  3. In the meantime, finely chop the onion, roughly chop the garlic and finely chop the green bell pepper

  4. Add the chopped ingredients into the hot fry pan, mix continuously, after 3 to 4 minutes and the onion is translucent, add in the paprika, quickly mix together, then add in the tomato sauce, parsley and season with sea salt & black pepper, mix together and then simmer

  5. After 4 to 5 minutes and the tomato sauce has slightly thickened, turn off the heat, add in the drained tuna and mix together until well mixed

  6. Lightly toast the slices of sandwich bread

  7. Add the tuna tomato mixture over the slices of toast, top off with another slice of toast, serve warm, at room temperature or even chilled, enjoy!
