
To make the fries, heat a large fry pan with a medium heat and add in the olive oil
While the oil is heating, cut the potatoes into french fry-style cuts that are 1/4 inch (0.635 cm) thick, then add the potatoes into a colander and rinse under water for 30 seconds to 1 minute, and then place them over a dishcloth and pat completely dry
Add the potatoes into the hot fry pan, gently mix them together so they're all coated in the olive oil, and then mix every 3 to 4 minutes so they all evenly fry
In the meantime, make the garlic chicken, heat a separate fry pan with a medium heat and add in the olive oil
Cut a slit in the cloves of garlic and add them to the fry pan, mix them together, then sauté for 5 minutes to infuse the oil
In the meantime, add the chicken breast over some paper towels and pat dry, then cut each one into 2-inch (5 cm) chunks, and then season the chicken with salt & pepper
After sautéing the garlic for 5 minutes, remove it from the pan and set it aside, then add the chunks of chicken, all in a single layer, and fry for 5 to 6 minutes on the first side, then flip and fry for 4 minutes on the second, then add in the broth, the sautéed cloves of garlic, and the bay leaves, gently shake the pan and go for another 2 to 3 minutes or until the chicken is cooked through (internal temp of at least 165 F - 74 C), then turn off the heat
Once the french fries are golden fried and cooked through, about 20 to 25 minutes, remove them from the pan and transfer them into a dish with paper towels, season the potatoes with salt
Transfer some of the garlic chicken into a serving dish, add some of the fries next to the chicken, and garnish with chopped parsley, enjoy!
*Drain the remaining olive oil into a fine sieve with a pitcher underneath; this will clean it up so you can use it on future recipes
