Uncle Tony’s Garlic Chicken & Fries | Possibly the BEST Chicken Recipe

One of my favorite childhood food memories is Uncle Tony’s garlic chicken & fries. A dish my tío Antonio (aka Uncle Tony) would make for us almost every single weekend. And I tell you, this recipe is easy to make, packed with flavors, and done in about 30 minutes. Serve it next to a bottle of Spanish Rioja for the ultimate treat.

To make this recipe, I used boneless chicken breast. You can also use chicken breast with skins, chicken thighs, or a combination of both. Either way, make sure to not overcook the chicken; otherwise, it will get a tough texture.

As for the fries, I used gold potatoes, but any type of potatoes will work. The secret? You want to fry the potatoes in extra virgin olive oil. As this is what gives them that incredible lift of flavors.

TIPS & TRICKS to Make this Recipe: When you fry the garlic, make sure to leave the skins on the cloves. This will infuse the olive oil without burning the garlic, which will give it a bitter flavor.

Uncle Tony's Garlic Chicken & Fries | Pollo al Ajillo con Patatas Fritas

Ingredients

FOR THE GARLIC CHICKEN

  • 1/4 cup extra virgin olive oil 60 ml
  • 2 boneless chicken breast 10 oz / 300 grams each
  • 12 cloves garlic (skins on)
  • 1/2 cup chicken broth 120 ml
  • 2 bay leaves
  • sea salt & black pepper

FOR THE FRIES

  • 1 cup extra virgin olive oil 240 ml
  • 3 medium potatoes (peeled) 1.5 lbs. / 700 grams
  • sea salt
  • chopped parsley for garnish

Instructions

  1. To make the fries, heat a large fry pan with a medium heat and add in the olive oil

  2. While the oil is heating, cut the potatoes into french fry-style cuts that are 1/4 inch (0.635 cm) thick, then add the potatoes into a colander and rinse under water for 30 seconds to 1 minute, and then place them over a dishcloth and pat completely dry

  3. Add the potatoes into the hot fry pan, gently mix them together so they're all coated in the olive oil, and then mix every 3 to 4 minutes so they all evenly fry

  4. In the meantime, make the garlic chicken, heat a separate fry pan with a medium heat and add in the olive oil

  5. Cut a slit in the cloves of garlic and add them to the fry pan, mix them together, then sauté for 5 minutes to infuse the oil

  6. In the meantime, add the chicken breast over some paper towels and pat dry, then cut each one into 2-inch (5 cm) chunks, and then season the chicken with salt & pepper

  7. After sautéing the garlic for 5 minutes, remove it from the pan and set it aside, then add the chunks of chicken, all in a single layer, and fry for 5 to 6 minutes on the first side, then flip and fry for 4 minutes on the second, then add in the broth, the sautéed cloves of garlic, and the bay leaves, gently shake the pan and go for another 2 to 3 minutes or until the chicken is cooked through (internal temp of at least 165 F - 74 C), then turn off the heat

  8. Once the french fries are golden fried and cooked through, about 20 to 25 minutes, remove them from the pan and transfer them into a dish with paper towels, season the potatoes with salt

  9. Transfer some of the garlic chicken into a serving dish, add some of the fries next to the chicken, and garnish with chopped parsley, enjoy!

    *Drain the remaining olive oil into a fine sieve with a pitcher underneath; this will clean it up so you can use it on future recipes
