The BEST Cheesy Garlic Omelette EVER | Easy 5 Minute Breakfast Recipe
This Cheesy Garlic Omelette, known as Tortilla de Queso al Ajillo, is probably the BEST Cheesy omelette ever. It´s packed with a ton of garlic goodness, super easy to make and all done in about 5 minutes.
This recipe is inspired by the restaurant Bar Ecus, which is located in the historic town of Segorbe. It´s typically served for either almuerzo (early lunch) or dinner. But you can totally serve it for breakfast.
What really gives this omelette that punch of garlic goodness is the Garlic Infused Olive Oil. The secret is to add it into the hot pan right before you add the eggs. That way it keeps its beautiful aroma and flavor.
TIPS & TRICKS to Make this Recipe: To make the parsley & garlic sauce, I used a mortar and pestle. But you can always use a food processor or handheld blender. Either way, the amount of sauce made, is enough to make 4 omelettes.

- 2 eggs
- 2 slices mozzarella cheese
- 2 cloves garlic
- 1/4 cup fresh parsley 16 grams
- 2 tbsp extra virgin olive oil 30 ml
- pinch sea salt
- dash black pepper
Instructions
-
Roughly chop the cloves of garlic and add into a mortar, along with the fresh parsley and a pinch of sea salt, using a pestle pound down until you form a paste-like texture, then add in 2 tbsp extra virgin olive oil, mix together and set aside
-
Heat a small to medium sized nonstick fry pan with a medium heat
-
Crack the eggs into a bowl, season with sea salt & black pepper, whisk together until well mixed
-
Once the pan is hot, add in 2 tbsp garlic infused olive oil and the whisked eggs, lower to a low-medium heat, after 30 seconds start pushing the omelette from the outer edges towards the center and let the runny eggs go into the empty part of the pan, do this until there are no more runny eggs, then add in the slices of cheese, fold the omelette, then flip it and cook for 30 seconds, transfer into a serving dish
-
Top the omelette off with some of the parsley & garlic sauce, serve at once, enjoy!
