Spanish Rice with Chorizo

This Spanish rice with chorizo, known as “arroz con chorizo,” is possibly one of Spain’s most iconic home-cooked dishes. It’s filled with flavors, easy to make, and done in about 40 minutes. Serve it next to a garden salad, crunchy baguette, and a bottle of Spanish Rioja for a complete and delicious meal.

To make this recipe, I used firm Spanish cured chorizo. You can use any type of chorizo you like. Just make sure it’s firm and cured; otherwise, it will fall apart once cooked. Either way, after you slice it, you want to sauté it in the olive oil for just a couple of minutes. If you overcook it, it will end up with a tough texture.

As for the rice, I used Spanish short-grain rice. Which is very similar to Arborio. Of course, you can use any rice you like. Just make sure to check the package instructions. That way, you get your liquid-to-rice ratios and cooking times right on the money.

TIPS & TRICKS to Make this Recipe: Once you pour the water into the pan, give the rice one final mix. After this step, you don’t want to mix the rice again. Otherwise, it will start to release its starch and lose its beautiful texture.

Spanish Rice with Chorizo | Arroz con Chorizo

Ingredients

  • 3 cups water 720 ml
  • 1/4 tsp saffron threads 0.17 grams
  • 1/4 cup extra virgin olive oil 60 ml
  • 3.5 oz Spanish cured chorizo 100 grams
  • 1 small onion (finely chopped)
  • 1 red bell pepper (finely chopped)
  • 6 cloves garlic (roughly chopped)
  • 1 tsp sweet smoked Spanish paprika 2.50 grams
  • 2 tomatoes (finely grated)
  • 1 cup short-grain rice (similar to Arborio) 190 grams
  • 1/2 cup frozen peas 75 grams
  • sea salt & black pepper
  • chopped parsley for garnish

Instructions

  1. Add the water and saffron into a saucepan, then season generously with salt, and heat with a medium heat

  2. At the same time, heat a large fry pan with a medium heat and add in the olive oil

  3. While the oil is heating, cut the chorizo into rounds that are a 1/4 inch (0.625 cm) thick

  4. Add the sliced chorizo into the hot fry pan and mix continuously, after 2 to 3 minutes and the chorizo is lightly sautéed, remove it from the pan and set aside

  5. Using the same pan with the same heat, add in the chopped onion, red bell pepper, and garlic, mix continuously

  6. After 4 minutes and the vegetables are lightly sautéed, add in the paprika and give it a quick mix, then add in the grated tomatoes, and season with salt & pepper, mix together and then simmer

  7. Once the grated tomatoes have slightly thickened, about 3 to 4 minutes, add in the rice and mix continuously for 2 minutes, then add the sliced chorizo back into the pan and the simmering water, give it one final mix, and then simmer on a medium heat

  8. When there are 3 minutes left of the rice being cooked through, add in the frozen peas, making sure to evenly spread them around, and then gently push down on them, lower to a low medium heat, and simmer until the rice is cooked through, then remove from the heat

  9. Cover the pan with a dishcloth and let it sit for 3 minutes, then uncover, and using a fork, gently fluff the rice

  10. Serve directly out of the pan or transfer into serving dishes, topped off with chopped parsley, enjoy!
