This Andalusian chopped tomato salad, known as “Piriñaca Andaluza,” is what simple and delicious food is all about. It’s filled with flavors, made with basic heart-healthy ingredients, and done in just 10 minutes. Serve it as a starter next to a crunchy baguette or even as a side next to some pan-grilled fish. Either way, it promises to fill you with goodness.

To make this recipe, I used tomatoes on the vine, an English cucumber, a spring onion, and a green bell pepper. You can mix it up and use different vegetables if you like. The most important thing is to make sure you cut the vegetables into similar sizes, as that’s what gives this salad that beautiful “chopped” uniform presentation.

What truly flavors this salad is the dressing. Made with just extra virgin olive oil, sherry vinegar, and garlic. You can also use red wine vinegar or even apple cider vinegar. However, using sherry vinegar is what gives this tomato salad that authentic Spanish touch.

Ingredients

  • 4 tbsp extra virgin olive oil 60 ml
  • 1 tbsp sherry vinegar 15 ml
  • 1 clove garlic (finely grated)
  • 4 large tomatoes
  • 1/2 English cucumber
  • 1 spring onion
  • 1 green bell pepper
  • sea salt & black pepper

Instructions

  1. Add the olive oil into a large bowl, along with the sherry vinegar and grated garlic, then season with salt & pepper and whisk together

  2. Roughly dice the tomatoes (making sure to dice each tomato in the exact same size), finely chop the cucumber, finely chop the spring onion, and finely chop the green bell pepper (making sure to finely chop all three vegetables in the exact same size)

  3. Add the chopped vegetables into the bowl with the dressing, season with salt & pepper, and gently mix together until well mixed

  4. Serve at room temperature or chilled, it will hold for up to 3 to 4 days in the fridge, enjoy!
