CRISPY Spanish Chicken Fritters

These crispy Spanish chicken fritters, known as “tortitas crujientes de pollo,” are what comfort food is all about. They’re packed with flavors, made with simple everyday ingredients, and done in about 30 minutes. Serve them as a tapas appetizer or even as a main course, next to some roasted potatoes and a garden salad.

To make this recipe, I used boneless chicken breasts. You can also use boneless chicken thighs or a combination of both. Either way, make sure to finely cut the chicken into small cubes. This will ensure that the chicken fully cooks through when you cook the fritters.

I served these fritters next to a simple mayo aioli. Made with just garlic, saffron, mayonnaise, Dijon mustard, lemon juice, and olive oil. I used a mortar & pestle to bring it together. If you don’t have one, you can also use a food processor, hand blender, or even a Nutribullet.

TIPS & TRICKS to Make this Recipe: If you see your fritter batter is too thin, just add in some more flour. If itโ€™s too thick, a splash of chilled club soda will do the trick. Either way, you can make the batter ahead of time and put it into the fridge in an airtight container. It will hold for up to 2 to 3 days.

CRISPY Spanish Chicken Fritters | Tortitas Crujientes de Pollo

Ingredients

FOR THE CHICKEN FRITTERS

  • 1/4 cup extra virgin olive oil 60 ml
  • 1/2 cup all purpose flour 60 grams
  • 1 large egg
  • 1/3 cup chilled club soda 80 ml
  • 1/4 cup chopped onion 40 grams
  • 2 cloves garlic (finely grated)
  • 2 tbsp chopped chives 5 grams
  • 1/2 tsp sweet smoked Spanish paprika 1.25 grams
  • 2 boneless chicken breast 8 oz / 225 grams each
  • sea salt & black pepper

FOR THE MAYO AIOLI

  • 2 cloves garlic (roughly chopped)
  • 1/4 tsp saffron threads 0.17 grams
  • 1/2 cup low fat mayonnaise 120 grams
  • 1 tsp Dijon mustard 5 grams
  • 1 tsp lemon juice 5 ml
  • 1 tbsp extra virgin olive oil 15 ml
  • sea salt & black pepper

Instructions

  1. Add the flour into a large bowl and make a well in the middle, then crack in the egg and whisk the egg, and then add in the chilled club soda and whisk everything together until you get a smooth batter

  2. Add the chopped onion into the smooth batter, along with the grated garlic, chopped chives, and paprika, then season with salt & pepper and whisk together

  3. Lay the chicken breast over some paper towels and pat dry, and then finely cut each one into small 1/4 inch (0.625 cm) cubes

  4. Add the chopped chicken into the bowl with the batter, season the chicken with salt & pepper, and give it one final mix until well mixed together

  5. Heat a large fry pan with a medium heat and add in the olive oil

  6. After a couple of minutes and the oil is nice and hot, add in spoonfuls of the batter, all in a single layer and evenly spaced out, cook in batches, fry for 3 to 4 minutes per side or until the fritters are golden and crispy and the chicken is fully cooked through, then transfer into a dish with paper towels

    *To keep your fritters warm after cooking them, add them into a preheated oven at its lowest setting

  7. To make the mayo aioli, add the garlic into a mortar, along with the saffron and a pinch of salt, using a pestle, pound down on the garlic until it's well mashed, then add in the mayonnaise, Dijon mustard, lemon juice, olive oil, and season with salt & pepper, whisk together until you get a creamy sauce

  8. Transfer the mayo aioli into a serving dish and decorate the fritters around it, serve at once, enjoy!
