Homemade Spanish Aioli
Aioli has to be Spainยดs best known sauce around the world. It originated in Mallorca, Spain and was first made with just garlic and extra virgin olive oil. In todayยดs version we add egg, which makes it alot easier to make.

This homemade aioli is a creamy and garlicky sauce that can be used is so many ways, and you gotta says itยดs healthy too! raw olive oil and raw garlic! one taste and you will be hooked.

Homemade Aioli
Ingredients
- 1/2 Cup Extra Virgin Olive Oil
- 2 Cloves Garlic
- 1 Fresh Egg
- 1/2 tsp lemon juice
- Sea Salt
Instructions

Mince the Garlic

Add to a mortar and pestle

Using the pestle, pound down on the garlic until it becomes a paste

Add egg yolk to the garlic (discard egg white)

Add 1/2 tsp lemon juice
-
Add a pinch of salt

Start adding the extra virgin olive oil in a slow stream into the garlic and egg and start stirring without stopping

Continue to add the olive oil in a slow stream while never stopping to stir the aioli

Once you are done with all the olive oil, your aioli is done! It should have the consistency of mayonnaise

Is it possible to simply use a garlic press instead of a pestle and mortar? Would doing so affect the consistency of the aioli?

In all honesty I have never tried making aioli with a garlic press, so I canยดt tell you, however, I am sure it is possible, press the garlic into a bowl and using a whisk blend with the egg and then slowly add in the olive oil as you continue to whisk ๐ much love

In Spain, this is just your standard pestle & mortar, but you can use any type of pestle & mortar to make this aioli, sometimes they have it in amazon, but I rarely have seen it, much love and stay safe ๐
