I´m a sucker for salads and this Mediterranean Chickpea Salad with Spanish Olives & Herbs has just become my new go-to salad. Loaded with a great combination of flavors, super easy to make and done within minutes. As you all know chickpeas are a power food, loaded with fiber, high in protein and they´re inexpensive, you can´t beat that. To make this salad I used jarred chickpeas instead of making them from scratch, just because it made it a lot easier and faster to put everything together. I also used a combination of green and black Spanish olives to really bring a pop of flavors, as well as a simple 2 ingredient vinaigrette that really brought the entire salad together. Mediterranean Chickpea Salad with Spanish Olives & Herbs

Ingredients

  • 1 15 ounce/500 gram jar chickpeas
  • 1/2 cup green pimento stuffed Spanish olives
  • 1/4 cup black Spanish olives
  • 2 cloves garlic
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp dried parsley
  • 1/2 tsp sea salt
  • 1/8 tsp black pepper
  • 2 tbsp freshly chopped chives
  • 1/4 cup extra virgin Spanish olive oil
  • 1 tbsp white wine vinegar

Instructions

  1. Drain the jar of chickpeas and rinse under cold running water, once they´re well cleaned shake off any excess water and add the chickpeas to a large bowl, rinse 1/2 cup of green pimento stuffed Spanish olives under cold running water just for a few seconds, then shake off any excess water and transfer the olives to a wood cutting board, using a chef´s knife push down on the olives that way they dont roll off the board when you cut them, finely dice them and add to the bowl with the chickpeas, do the exact same thing with a 1/4 cup of black Spanish olives, then finely mince 2 cloves of garlic and them to the bowl 

  2. Season everything with a generous 1/2 teaspoon of dried thyme, a generous 1/2 teaspoon of dried oregano, a generous 1/2 teaspoon of dried parsley, a generous 1/2 teaspoon of sea salt and about 1/8 teaspoon of freshly cracked black pepper, for the last ingredient grab a handful of fresh chives, finely chop them and them to the bowl

  3. To make the dressing add a 1/4 cup of extra virgin Spanish olive oil into a seperate bowl along with 1 tablespoon of white wine vinegar and whisk it all together, then drizzle the dressing on top of the salad and mix everything together until well combined, enjoy!

    Quizás esta es una pregunta tonta, pero podría sustituir las hierbas secas por frescas, ¿verdad? Pregunto, porque, por ejemplo, la ensalada griega no es lo mismo con el orégano fresco, es decir, es mejor con el orégano seco.

    ? That looks amazing. Like the idea that there is no tomato in there as most of the recipes have a tomato base. Something new and exiting to try. What would i serve this with?
