Creamy Tomato Butter Beans | Packed with GOODNESS & Easy to Make
These Creamy Tomato Butter Beans are what simple and delicious food is all about. We’re talking a ton of great flavors, basic pantry staples, and all done in about 30 minutes. Serve them as a side dish next to some grilled fish or even as a main course. Either way, they promise to fill you with so much goodness.
To make this recipe, I used jarred butter beans. Which is the same thing as the canned ones. You can also use dried butter beans if you prefer. Just soak them in plenty of water overnight and then simmer the following day for 1 to 2 hours or until tender.
What flavors this dish is the creamy tomato sauce. Made with garlic, onions, tomatoes, and spices and herbs. I used a hand blender to make the sauce. But you can also use a food processor, stand-up blender, or even a nutribullet.
TIPS & TRICKS to Make this Recipe: You can serve these butter beans warm or at room temperature. They will hold for up to 3 to 4 days in the fridge and up to 3 months in the freezer. Just add in some broth when reheating to bring back that creamy goodness.

Creamy Tomato Butter Beans
Ingredients
- 3 tbsp extra virgin olive oil 45 ml
- 1 medium onion
- 4 cloves garlic
- 1 tsp dried oregano 1 gram
- 1/2 tsp sweet smoked Spanish paprika 1.25 grams
- 4 tomatoes
- 1 jar butter beans (same as canned) 25 oz / 700 grams
- handful chopped fresh spinach
- 2 tsp lemon juice 10 ml
- sea salt & black pepper
- 2 tbsp grated manchego cheese (optional) 15 grams
Instructions

Heat a large fry pan with a medium heat and add in the olive oil

While the oil is heating, roughly chop the onion and garlic

Add the chopped ingredients into the hot fry pan, mix together, then mix every minute so it all evenly sautés

In the meantime, cut the tomatoes into small bite-sized pieces

After about 5 minutes and the onions are translucent, add in the chopped tomatoes, along with the oregano, paprika and season with sea salt & black pepper, mix together, then mix every minute or so, this way it all evenly sautés

After 8 minutes and the tomatoes have broken down and they're lightly sauteed, remove the pan from the heat

In the meantime, drain the butter beans into a colander and rinse the beans under water

Once the ingredients have slightly cooled in the pan, about 5 minutes, transfer them into a tall plastic cylinder, using a hand blender, blend the ingredients until you get a creamy sauce, you can also use a food processor, stand-up blender, or a nutribullet

Heat the same pan with a medium heat, add in the creamy tomato sauce, drained butter beans and season with a kiss of sea salt & black pepper, mix together and then simmer

After simmering the beans for 10 minutes, add in the lemon juice and the spinach, gently mix together until the spinach is lightly wilted, then remove from the heat

Transfer into a large serving dish, top off with the grated cheese (omit to keep it vegan), serve warm or at room temperature, enjoy!
