Patatas Bravas that will Transport you to Spain | Easy & Healthy Recipe
You have to say, patatas bravas are one of Spain´s most iconic tapas dishes. So simple yet so delicious. In this recipe, I´m going to show you how to make a healthier version of the classic recipe. Now, just because this recipe is healthier, doesn´t mean it lacks in flavor. In-fact, these patatas bravas are so good, with one taste, your tastebuds will be instantly transported to Spain.
What makes these patatas bravas healthier than the traditonal recipe, is that we´re roasting the potatoes instead of frying them. And we´re also using just 1 tablespoon of olive oil for the entire recipe, while the original recipe calls for at least 1 cup.
The secret to giving the roasted potatoes that fried like texture, is to soak the cut potatoes in water for 30 minutes. This helps remove some of the starch in the potatoes. That way when they´re roasted, they have a crispy texture and a melt in your mouth interior.
TIPS & TRICKS to Make this Recipe: I used new potatoes in this recipe, but you can use any waxy potato you like. To make the spicy garlic mayonnaise, I used low fat mayo. Just to make this recipe even healthier. To veganize this recipe, just use your favorite vegan mayonnaise.

Patatas Bravas that will Transport you to Spain | Easy & Healthy Recipe
Ingredients
- 3 medium sized potatoes
- 1 tbsp extra virgin olive oil 15 ml
- 1/2 cup low-fat mayonnaise 115 grams
- 2 cloves garlic
- 1 tsp lemon juice 5 ml
- 1/2 tsp hot smoked Spanish paprika 1.15 grams
- pinch sea salt
- dash black pepper
- handful finely chopped parsley
Instructions

Cut 3 medium sized potatoes (peeled, washed & patted dry) into small pieces that are 1/2 inch (1.25 cm) thick

Add the cut potatoes into a large bowl and fill with cold water, just enough to cover the potatoes, let them sit for at least 30 minutes

After 30 minutes drain the potatoes into a colander and rinse the potatoes under cold running water, then transfer the potatoes over a dishcloth and pat completely dry

Add the potatoes into a large bowl, along with 1 tbsp extra virgin olive oil and season with sea salt & black pepper, toss together until well mixed

Line a baking tray with parchment paper, add the potatoes, all in a single layer, add into a preheated oven, bake + broil option (bottom + top heat), 210 C - 410 F

Meanwhile, add 1/2 cup low-fat mayonnaise into a bowl, finely grate in 2 cloves garlic, add 1 tsp fresh lemon juice, 1/2 tsp hot smoked paprika and season with sea salt & black pepper, whisk together until well mixed and set aside

After about 45 minutes, remove the potatoes from the oven, transfer into a serving dish, add the spicy garlic mayonnaise over the potatoes and sprinkle with finely chopped parsley, enjoy!

23 . Sep . 2021I’m glad that you’re presenting recipes that are calorie and fat reduced. I made this recipe last night using my air fryer and instead of any oil, I sprayed the pan with cooking spray and then sprayed the potatoes with cooking spray as well. The spray I used has 0 calories and 0 fat. I followed the rest of the recipe exactly and it was wonderful. It was an excellent side dish for a rotisserie chicken that I had also made in my electric cooker. Thanks again.
